La technique d’élevage sur bouchot, largement pratiquée en Baie de Somme mais aussi en Normandie, Bretagne et Pays de Loire, trouve probablement ses origines en Irlande dans le courant du 13ème siècle.
Les jeunes moules se fixent naturellement sur de longues cordes (captage) lesquelles sont ensuite enroulées sur de grands pieux disposés dans la zone de balancement des marées : les bouchots, contraction des mots gaéliques « bout » (clôture) et « choat » (bois).
A l’abri des crabes et autres prédateurs, les jeunes moules peuvent ainsi se nourrir à chaque marée haute en filtrant le plancton contenu dans l’eau jusqu’à la récolte appelée « cueillette ».
La meilleure période pour les consommer s’étend de mai à octobre, c’est à ce moment qu’elles sont les plus charnues, riches en iode, en sels minéraux (zinc, fer, magnésium…) et en vitamines notamment B et E.
